1 pound whole-milk mozzarella cheese
⅓ c. flour
5 eggs, well beaten
3 c. plain fine bread crumbs
oil for frying
marinara sauce

Directions:
Directions:
Slice cheese into 12 slices, then cut each in half lengthwise resulting in 24 pieces. Coat the cheese with the flour then dip into the eggs and then bread crumbs. Again dip into the egg and then into the bread crumbs to double-coat. Be sure the cheese is completely coated. Refrigerate cheese for a few days or freeze until one hour before cooking. Heat 1½ to 2 inches of oil in a frying pan to 350 to 375 degrees. Place the cheese into the hot oil. When it rises to the top, puffs and is golden brown, remove it from the pan. Serve on a platter with marinara sauce and grated cheese. Garnish with parsley.
