1 c all purpose flour
1/2 tsp ground cinnamon
1/2 tsp baking soda
1/2 c butter at room temperature
1/2 c plus 1 T brown sugar
1/4 c granulated sugar
1 large egg
1 tsp vanilla
1 1/2 c rolled oats
1 c raisins or 1 c choc chips

1. In large bowl, mix flour, cinnamon, baking soda. Set aside.
2. In stand mixer bowl, cream butter and sugars until smooth. Add egg and vanilla and mix til smooth.
3. Add flour mixture and mix until smooth. Add oats and raising until combined.
4. Cover cookie dough with plastic wrap and refrigerate for 30 minutes.
5. Heat oven to 350º.
6. Line two baking sheets with parchment paper.
7. Remove dough from fridge. Measure 1-2 T and roll into ball for each cookie. Press top of cookie gently but do not flatten. Leave room between cookies.
8. Bake in separate batches for 10-12 minutes until lt brown and middle has set.
Remove from heat and let sit for 5 minutes before moving to a coollng rack until cool.
