1 3/4 C flour
2 1/2 tsp baking powder
1/2 tsp salt
3/4 C Milk + 2 T
1/3 C vegetable oil
1 egg
2 T packed brown sugar
1 C finely diced apples (granny smith or other hard green apple)
1 C strong sharp cheddar cheese, grated
3 T shredded mild cheddar cheese (for topping)

Preheat oven to 400º

Grease a loaf pan.
In medium bowl, combine flour, powder and salt. Whisk and set aside.
In a large bowl mix; milk, oil, egg and brown sugar until well blended. Pour in the apples and then stir in flour mixture. Stir in the cheese a handful at a time until combined. Batter will be lumpy and thick. Pour into loaf pan and bake for 45 minutes. Sprinkle the mild cheddar on top, return to oven and bake an additional 10 - 15 minutes.

Cool in pan for 20 minutes, the remove from pan to cool completely.
