1/2 disgustingly rich brownies with chocolate chips/chunks! Oreo, graham cracker, or pretzel. OR mom's favorite - shortbread cookies!
1 1/2 cups cookie crumbs
1/2 cup unsalted butter, melted
1/8 tsp salt (except for pretzels)
1/2 cup unsalted butter, melted

Preheat oven to 325º F (175 degrees C). Butter one 9 or 10 inch springform pan.
Combine the (oreo, shortbread, etc) crumbs, melted butter, sugar. Mix well and press mixture into the buttered springform pan.
Bake for 8-10 minutes

3 (8 ounce) packages cream cheese, softened
1 cup white sugar (or ¾)
3 eggs
1 cup sour cream (or ½)
1/4 teaspoon salt
2 teaspoons vanilla extract

Turn up or preheat oven to 350º F
In a medium sized bowl beat the softened cream cheese until smooth. Gradually add white sugar mixing until well blended. Add eggs, one at a time. Beat at low speed until very smooth. Do not beat much once eggs are in.

Stir in sour cream, salt, and vanilla; beat until smooth.

Pour mixture into prepared pan. Put pan into a water bath for baking (wrap springform pan with foil to stop water from contacting cake, this is hard). Bake in the center of oven at 350º degrees F (175º degrees C) for 45 minutes.

You can shake the pan gently to check if it jiggles too much. This sorta takes experience to get right. You can also check with thermometer to see if it is 160º - 165º F or 70 - 72 C. Center will be soft but will firm up when chilled. Do not over bake. Leave cake in oven with the heat turned off and the door ajar for 45 minutes. This helps set slowly and keep from cracking.

Remove cake from oven and chill for 12 hours. It will fall apart and make Stephen sad if you cut it too soon :)

I made this for our wedding! It was a really nice treat for us! I used a brownie crust, but if I had known about shortbread cookie crust, I think I would've done that!

Mom made it from this recipe when I gave it to her. She didn't use a water bath, but our family kinda likes cheesecakes with a crack in the middle. It looks cool! She also made it with shortbread cookie crust. The picture was sent to Emma and I after she tried it out.

I changed the sugar and sour cream to change the tanginess and texture. The lower amounts work if you want to do it.
