2 medium potatoes, peeled
2½ cups of water
2 chicken bouillon cubes
¼ cup of green onions, chopped
¼ cup of green peppers, chopped
1 tsp butter
1½ cups of grated cheese
1 cup of white sauce (see below)
Milk to add, if necessary

Boil potatoes, drain and reserve liquid. Mash potatoes. Sauté onions and peppers in butter in pot. Add potato water and bouillon cubes. Cook gently for 5 minutes. Add potatoes and cheese. Stir well
 

White Sauce


Ingredients:

2 tbsp of butter
1½ tbsp of flour
¾ cup of milk

Directions:
Directions:
Melt butter in microwave. Add flour and milk. Stir until it thickens in microwave. About 6-8 minutes.
