Vegitarian Burgers or Loaf Recipe

1 onion, chopped
3 cloves garlidc, minced
2 medium carrotsw, peeled and shredded
¼ cup each: dry chickpeas, (also known as garbanzo beans), green lentils, and red kidney beans
¼ cups sliced mushrooms
1 small squash, shredded
2 tsp olive oil
½ cup oatmeal
¼ cup wheat germ
¼ cup brown rice
½ cup panko, or soft breadcrumbs
¼ cup fresh cilantro or parsley, chopped
2 eggs slightly beaten
salt and pepper to taste
2 TBS soy sauce

Directions:

in a skillet heat olive oil over medium heat; add onion and garlic and cook until onion is softened, add squash, and carrots and toss until tender. Cook rice until tender, (about 20 min).

Add cooked rice, chickpeas, beans, lentils and mushrooms to skillet. Stir and cook 2 minutes. remove skillet from heat. Pulse lihtly in a food processor, or blender. Add wheat germ, bread crumbs, oatmeal, salt and pepper pulse and refridgerate for 1 hour.

If you're making hamburgers; make desired-sized patties with cooled veggie mixture, then put a little flour in a ziplock baggie and coat the patties. Refridgerate for 15 to 20 minutes.

Place patties on greased broiling pan. Broil 5 minutes on each side. if preferred, lightly fry in a pan. Serve on toasted hamburger buns, with desired fixings.

If you're making a meatloaf:

Preheat oven 350º

Mix all ingredients all together. Bake 1 hour 15 minutes. Afterthe first 30 minutes of cooking, add tomato sauce on top if desired.

This is a great alternative to matloaf and burgers. You may need to play with the volume of bread cdrumb/oatmeal/wheat germ to get the desired consistency for forming into patties. Only thing to remember is this is timely to make from dried beans. It tastes greatn and I'm not a vegetarian.


You can use the canned variety of beans; this cuts down the preparation time. But the dried beans need to soak and boil for at least 2-3 hours. If you use dried beans boil in this order: chickpeas 30 minutes, then lentils in the last 30 minutes of cooking.

Adjust amount of bread crumbs (or panko), oatmeal, and wheat germ to your taste, or for desired consistencyfor both patties and meatloaf.
