1 chicken fryer - cut up
Salt and pepper
1 egg
1 1/2 c flour
3 t garlic salt
1 1/2 t paprika
1 t poultry seasoning
1 1/2 t salt
3 t pepper
Shortening

Directions:
Directions:
Wash chicken (you can remove the skin if you want to - I don't)
Season generously with salt and pepper
Over medium heat, melt about 1 1/2 inches of Crisco shortening in an iron skillet
In a bowl, combine dry ingredients.
In a small bowl, mix a little water or buttermilk with the egg and beat well.
Batter chicken by dipping in the flour mixture, then the egg, then the flour again.
Test the grease by dropping a tiny amount of batter in; when it sizzles, it's ready.
Fry the chicken until it is light brown on both sides.
Cover the skillet and reduce heat to low.
Cook about 15 minutes, turning occasionally.
Remove the lid and increase heat to medium.
Brown a few minutes longer on both sides.
Remove and drain on a paper sack or paper towels
