2 lbs. scallops
1/4 cup olive oil
2 med shallots chopped
3 large ripe tomatoes peeled and chopped
2/3 cup white wine
1 tsp. each chopped basil, thyme, rosemary
1 tbsp. chopped parsley
2 med garlic cloves minced
1/4 tsp. salt
1 tbsp. flour

Directions:
Directions:
Heat 2 tbsp. olive oil. Add shallots, sauté 3 minutes. Add tomatoes, wine, herb, garlic. Simmer 5 min. Add salt & pepper to taste.
Pat the scallops dry. sprinkle with flour
Heat oil in skillet. Sauté scallops about 2 minutes on each side.
(everything up to the scallops can be prepared ahead of time).
Serve scallops with Autumn rice. Recipe in this book.

Hint: to peel tomatoes...drop into boiling water about 3-4 minutes or until the skin looks like it is lifting from the tomatoes. Take out of boiling water and put into a ice bath for about 3 minutes. Tomatoes should peel evenly and easily.
I have used this recipe " Wow" guests for years. It is heart healthy and very festive.
