5-6 oz can tuna,
1 beaten egg,
1 Tbsp home made mayo,
2 T Parmesan,
1 1/2 T golden flax meal,
2 T almond flour,
1/8 t sea salt,
1/4 t garlic powder,
1/4 t onion powder,
2 T Avocado, Coconut or Olive Oil to cook in.

Aioli Sauce:
1/2 cup homemade mayo,
3 cloves minced garlic,
1 t grated lemon zest,
1 t lemon juice,
1/8 tsp sea salt,
1/8 t pepper.
Several dashes of compliant hot sauce, if you like.

Mix sauce ahead and refrigerate to meld flavors.
Drain tuna extra well and push out as much water as you can. Mix all ingredients except oil. Heat oil on medium high heat. Place heaping spoonful in palm and pat flat, making a cake, place in hot oil, patting flatter with spatula. Fry 2-3 minutes until brown and crusted. Top with Aioli Sauce.
