4 cups coarsely chopped romaine lettuce...
1 cup cherry tomatoes, halved...
1/2 cup canned chickpeas, drained and rinsed...
1/4 cup coarsely chopped pepperoni.....
1/4 cup coarsely, chopped kalamata olives..
1/2 cup shredded part-skim mozzarella cheese...
2 T Italian parsley, chopped, fine...
Kosher salt..
Freshly ground pepper...
1/2 cup croutons...
1/2 cup chopped salami or ham...
1/4 cup thinly sliced red onion...

Salad Dressing

3 T extra-virgin olive oil...
1 T pepperoncini brine...
1 T fresh lemon juice...
1 T red wine vinegar....
1t Italian seasoning...
1/4 t kosher salt, freshly ground pepper, to taste...

Directions:
Directions:
Put all salad ingredients in a medium bowl...
In another medium bowl whisk together olive oil, brine, lemon juice, vinegar, Italian seasoning and S & P
Add dressing to salad, toss well, add croutons on top and serve...
