3 slices bacon
4 tablespoons onions, minced
1 teaspoon dried parsley
½ teaspoon cayenne pepper
4 eggs
⅛ teaspoon fine grind black pepper
½ cup swiss cheese, shredded

Directions:
Directions:
Cut bacon into small pieces with kitchen scissors. Fry until brown but not crisp. Pour off all but 1 tablespoon of fat. Add onions and parsley to bacon and sauté until onions are lightly browned. Season with ¼ teaspoon salt and the cayenne. Spread out evenly in frying pan.

Break eggs into pan. Season with remaining ¼ teaspoon salt and black pepper. Sprinkle with cheese. Cover and cook slowly until eggs are set and cheese is melted. Serve at once
