10 lbs of red potatoes, wash and leave skins on
1 cube butter
3/4-1C Extra Virgin olive oil
3 onions diced

Directions:
Wash and leave skins on. In a 12 inch deep Dutch oven, cut potatoes into 1-1 1/4 in squares or bigger (just not too small). In an oven, melt the butter. Add the oil. Saute butter and oil until onions are clear, don't let butter burn. Add potatoes, salt and pepper to taste.
Cook for 1-1 1/4 hour. Stir 3-4 times during process browning potatoes to desired crispness. Stir on low flame. Always put on lid.
Can ham or bacon at this point.
