1 16 ozs. container sour cream
1 1 oz. package taco seasoning
2 16 oz. cans refried beans (vegetarian)
⅓ c. salsa

1 small head of lettuce, shredded
1 large tomato, diced
2 avocados, peeled, pitted, and diced
½ c. green onions, chopped
2 c. Mexican style cheese blend, shredded
1 25 oz. can black olives, sliced (optional)
1 bag tortilla chips

In a small bowl, mix together the sour cream and the packet of taco seasoning and then chill in the refrigerator for 30 minutes to allow the flavors to combine.

In a small saucepan, combine the vegetarian refried beans and salsa. Season with pepper to taste. Heat on medium until evenly blended, about 5 to 7 minutes. Remove salsa mixture from the heat and allow it to cool. Shred lettuce and dice the tomatoes, avocados, and green onions.

In a 9-by-13 inch pan, spread the cooled beans and the salsa mix in an even layer. Spread the spiced sour cream over the bean mix. Layer the cheese, olives, lettuce, tomatoes, avocados and green onions in that order evenly over each ingredient.
