1 c. chopped leeks, only white part
¼ c. butter
4-5 quarts of cleaned and chopped vegetables (onion, celery root, parsnips, carrot, celery, turnip, brussel sprouts)
3 c. chicken stock
½ - 1 c. heavy cream
Salt and pepper to taste
Pinch of nutmeg0

Directions:
Directions:
Saute leeks in butter until soft. Add remaining vegetables to the leeks and stir to coat with butter. Add more butter, if needed. Pour in chicken stock and bring to a boil.

Reduce heat and simmer until vegetables are tender. Remove from heat and cool slightly. Puree in food processor or blender in batches until mixture is smooth.

Return to pot and add cream and seasonings. Reheat when ready to serve but do not boil.
