Blueberry French Toast Casserole Recipe

6c. cubed whole grain bread
8 eggs whites
1/5c. unsweetened almond milk
1/4c. pure honey
2tsp almond extract
1tsp vanilla extract
2tsp ground cinnamon
2c. fresh/frozen blueberries

Directions:
Directions:
IN bowl, combine egg whites, almond milk, honey, extracts and cinnamon. Whisk well.

Spray 9x13 dish with coconut oil. Spread bread evenly on the bottom of dish.

Pour liquid mixture over the bread and allow to sit for at least 30 minutes. Mixing once or twice to be sure all parts of bread are moist.

Bake in oven at 350. Mix in blueberries.

Bake for 45 minutes or until there is no longer any liquid between the bread.

Let cool. Serve!
