1 Medium Head of Cabbage
2 pkg. of Egg Roll Wraps (15 skins in each)
1 pkg. of rolled sausage (mild, spicy or links) links need to be chopped in blender
Salt and Pepper (for taste)
¼ c of bacon grease
⅓ c of water for cabbage
¼ c of water for the egg roll wraps
1 electric fryer with vegetable oil
1 bottle of Sweet Chile Sauce
1 cookie sheet lined with paper towel

In a stock pot, add grease on medium heat, heat grease up
Clean cabbage and remove leaves. Chop cabbage crosswise then cut it again lengthwise, rinse and shake water off cabbage. Place cabbage in pot with hot grease. Cover pot with a lid with an air hole of tilt lid so that some air can get into the pot.
Season cabbage with salt and pepper. Stir cabbage, the water in the cabbage will start to cook the cabbage.
Add water when you see that their is little water in the pot. Stir and taste. If you need to season more than the salt and pepper, then do so.
Cook sausage in sauce pan drain and add to cabbage and stir.
Once sausage and cabbage is cook, on a clean surface take one egg roll wrap at a time and place it on your surface at an angle, put a serving spoon of the mixture into the wrap and fold in an angle, fold the two edge angles into themselves and roll to the end of the wrap, with a brush dip into the water to seal the egg roll wrap. Set aside and repeat until all done. Put egg roll into hot grease and let cook into they float turn as necessary until brown, remove and place on paper towels.

This recipe can be changed to use shrimp or chicken if you want to. Remember not to forget the sauce for these egg rolls. Use paper towels on a cookie sheet to soak up the grease from the egg rolls.
This is a party favorite that everyone has to have at every gathering. These egg rolls froze well. Enjoy!!
