2 cans blackeye peas (I prefer Bush's Purple Hull Peas)
1 can mild Rotel tomatoes
1 can crushed tomatoes
1 cup chopped onion
1 cup chopped celery
2 lb. sausage (any type; I use Jimmy Dean)
2 cups water

Directions:
Directions:
Fry sausage and drain well. Mix all ingredients in a saucepan or slow cooker; simmer until flavors blend. Great winter's day meal!
