Ingredients: Streusel Topping: 1/4 cup plus 2 tbsp packed brown sugar 1/4 cup all purpose flour 1/4 cup old fashioned oats 2 tbsp + 2 tsp cold butter
Pancakes: 2 cups Bisquick mix ( see recipe for homemade mix) 1/2 tsp ground cinnamon 1/4 tsp ground nutmeg 1 cup Granny Smith Apple peeled and diced 1 cup milk 2 eggs

Directions:Streusel: mix first 5 ingredients — cut in butter until mixture is crumbly. — set aside.
Pancakes: stir all pancake ingredients until well blended. Heat griddle to 350º (to test, sprinkle griddle with a few drops of water — if bubbles jump around, the griddle is ready). Spray with cooking spray.
For each pancake, pour a 1/4 cup of batter onto hot griddle — sprinkle each pancake with 2 tbsp of streusel mix. Cook until golden brown around edges and turn. Cook other side until light brown about 1 to 1 1/2 minutes. Serve streusel side up with maple syrup or powdered sugar.
I made a half recipe and it came to 6 pancakes. Very tasty!! |
