3 Boneless Skinless Chicken Breast
1 Onion
½ pkg. Frozen Chopped Spinach, thawed and drained
¾ to 1 c. Mozzarella Cheese, shredded

Directions:
Directions:
Cut chicken breasts in half to make cutlets. Place in a freezer bag and pound flat with a heavy skillet. Place each breast on a separate piece of foil. Chop the onion and sauté in a little olive oil until starting to turn golden, add the thawed and drained spinach and sauté with onion about 3-5 minutes. Remove from heat and spoon onto the center of the breast in equal portions. Sprinkle mozzarella cheese over the spinach mixture. Fold the breast over the spinach and cheese and wrap the foil around to hold it in place. Place the breasts in a baking dish. Bake at 350º for 1 hour 20 minutes.
