8 cups water
2 cups lentils (1 pound)
2 slices bacon, diced, uncooked
½ cup chopped onion
½ cup chopped celery
½ cup chopped carrot
3 tbsp snipped parsley
1 clove garlic minced
2 ½ tsp salt
¼ tsp pepper
½ tsp oregano
*1 pound can tomatoes
*2 tbsp wine vinegar

Directions:
Directions:
Rinse lentils, drain, put in soup kettle. Add 8 cups water and remaining ingredients (*EXCEPT tomatoes and vinegar). Cover and simmer for 1 1/2 hours. Add tomatoes and vinegar and simmer 30 minutes longer.
