1 lb. ground beef
1 chopped small onion
1 cup shredded carrots
1 cup diced celery
1 tsp basil
1 tsp parsley flakes
1 tbsp butter
32 oz. beef broth
4 cups frozen southern hash browns
8 oz. Velveeta® cheese
1 cup milk
˝ tsp pepper
˝ tsp salt
1 cup sour cream

Directions:
Directions:
In stock pot, brown beef; drain and set aside. In the same pot, sauté onion, carrots, celery, basil and parsley with 1 Tbsp butter until vegetables are tender. Add broth, potatoes and beef, and bring to a boil. Reduce heat, cover and simmer for 10-12 minutes or until potatoes are tender. Cut cheese into one inch cubes. Add cheese, salt and pepper. Mix milk and sour cream, and slowly add to mixture.
