3 eggs, beaten
1 cup oil
2 cups sugar
2 cups grated zucchini
2 tsp. vanilla
3 cups flour
1 tsp. baking soda
½ tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
½ cup chopped pecans

Directions:
Directions:
Preheat oven to 325º. Grease and flour 2 loaf pans
Beat eggs
Add oil, sugar, zucchini and vanilla - cream together
Add baking soda, baking powder, salt and cinnamon - mix thoroughly
Add flour, one cup at a time - beat until thoroughly blended
Add nuts and mix
Bake in 2 prepared pans at 325º for 1 hour or until toothpick comes out clean
