1 c. chopped nuts
1 c. brown sugar
½ c. plain flour
½ tsp. baking powder
2 large eggs
½ c. butter, melted
½ tsp. vanilla
Directions:
Directions:
Combine nuts, sugar, flour and baking powder in a large bowl. Then make a well in the center of mixture. Beat eggs until foamy, then stir together eggs ,butter and vanilla and add to dry ingredients, stir until moistened. Spoon batter into muffin cups lined with paper or foil baking cups, that have been sprayed with oil, until 2/3 full. Bake at 350º for 12-14 minutes. Use mini muffin tins.
