1½ pounds boneless pork loin, trimmed fat and cut into 6 slices
1TBS oil
⅓ cup orange juice
3 TBS soy sauce
2 TBS honey
1 TBS Dijon mustard
1 tsp fresh ginger root, finely chopped
2 cloves garlic, crushed

Directions:
Directions:
Sprinkle each pork slice with pepper. Heat oil in large skillet over medium heat, brown 3 to 4 minutes per side. Remove from Skillet;. Wipe pan clean, removing excess oil.
Return pork slices to skillet.

Combine orange juice, soy sauce, honey, mustard, ginger root and garlic. Pour mixture over pork spices. Cover and simmer on low heat 10 to 12 minutes or until pork is tender. Place pork slices on plate and keep warm.

Continue to cook sauce to desired thickness
