1 lbs Yukon gold potatoes
1 tbsp salt
white vinegar
2 tsp freshly chopped rosemary
2 tbsp duck fat
Salt and freshly ground black pepper to taste

Directions:
Directions:
Preheat oven to 450º. Place potatoes in a pot and cover with cold water. Add a tbsp salt and a splash of vinegar. Bring to a boil over medium high heat. After they come to a boil cook for 4 to 5minutes. Drain and transfer to a mixing bowl. Sprinkle 2 tbsp of duck fat, add rosemary and toss to evenly coat. Don't worry if the are rough and broken up on the edges. Spread potatoes on a rimmed baking sheet, sprinkle with salt and pepper and cook for about 35 to 40 minutes until golden brown flipping once while cooking. Serve hot.

This is from a D’Artagnan recipe. Go to D'Artagnan on the internet and shop for the best meats anywhere. I get rack of venison from them and it is next day aired to me. Not cheap but it will knock your socks off it is so good. Check them out for a really special dinner.
