Apple Cake
4 cups diced raw apples (pippin)
2 eggs (slightly beaten)
2 cups white sugar
2 tsp cinnamon
1 tsp nutmeg
1/2 cup salad oil (mazola)
1 cup raisins or chopped nuts or 1/2 & 1/2
2 cups flour (unsifted)
1 tsp salt
2 tsp baking soda

Creamy Chocolate Frosting
1/4 cup butter
3 squares unsweetened chocolate
2 1/4 cup sifted and packed sugar
1/4 tsp salt
1/3 cup milk, scalded
1 tsp vanilla

Apple Cake
Break eggs over apples, add sugar, spices, oil, nuts, and/or raisins. Mix well with fork, add flour, salt, and baking soda. Mix well and pour into greased pan (8x13x3) or (10x14x2). Bake at 325º for 45-50 minutes.

Creamy Chocolate Frosting
Melt butter and chocolate over hot water and stir to blend, measure sugar and salt into 2 qt mixing bowl. Add hot milk and stir until completely dissolved. Stir in chocolate, beat while hot and thin with a wooden spoon until of proper spreading consistency. Then beat in vanilla when mixture begins to thicken. Spread on cake when thick and creamy.
