4 boneless chicken breasts
1 can black beans
1 can corn
1 jar of salsa (I use Pace hot)
1 can green chilies
Taco seasoning
Mexican blend cheese
Casserole dish

Directions:
Directions:
Preheat oven to 350º and spray 9x13 dish with cooking spray.
Season both sides of the chicken breast with taco seasoning.

In casserole dish, add drained and rinsed corn and beans and mix with entire jar of salsa until combined. Place chicken breast on top and cover with tin foil.

Bake for 35-40 minutes until chicken is cooked, then remove tin foil. Spoon green chilies over chicken then top with shredded cheese and bake for an additional 5 minutes uncovered.

Serve! Best paired with some Mexican style rice
