1 Cup of plain flour
1 Egg

1. Add flour, milk and egg to the bowl.

2. Whisk with a fork until lumps are gone.

3. Heat frying pan.

4. Add tiniest winiest amount of oil to the pan and then swirl in the mixture.

You'll need to play with the oil and mixture balance to get it just right so the pancakes don't stick but also aren't too thick or swimming in oil. I prefer to use a spray oil for this than normal olive oil and often end up throwing away the first pancake as it's always too thick!

Pancakes make great breakfasts, snacks and pudding.

Any spare mixture can be used the next day to make Toad in the hole, Yorkshire puddings (giant or mini) or Mincebeef batter
