1¾ cup all purpose flour
1 4-serving size package instant pistachio pudding mix
¾ cup miniature chocolate pieces/chips
⅔ cup sugar
2½ tsp baking powder
½ tsp salt
2 beaten eggs
1¼ cup milk
½ cup cooking oil
1 tsp vanilla extract
½-1 can cream cheese frosting

Opt: for decorating
Green colored sugar
½ cup M and M's (green preferred)

Preheat oven to 375º with rack in middle position. Grease cupcake tin/cups or line with paper bake cups.

In large mixing bowl, stir together flour, pudding mix, chocolate pieces, sugar, baking powder and salt. In small bowl, combine beaten eggs, milk, oil and vanilla extract. Stir wet mixture into flour mixture just until combined. Fill cupcake cups ⅔ full.

Bake in 375º oven for 18-20 minutes or till golden brown. Cool on wire rack. Frost with cream cheese frosting, sprinkle with green sugar. and then, a few M and M pieces.
