Cooked Grilled whole Chicken (breast or thighs only can be used)
2 small cans of El Pato (spicy tomato sauce)
Chicken broth
2 cans of corn
2 cans of green beans
1 or two large cans of hominy
Onion diced
Radish, lime, cabbage for garnish

Directions:
Directions:
Place chicken in a very large pot. Add cans of tomato. Add vegetables and hominy, you can add any type of veggies you like. Add broth enough to make this a soup consistency. Simmer for at least an hour until the sauce is good and thick and all the flavors come together. You can leave it more like a soup if you like. Serve in a bowl and garnish with shredded cabbage or lettuce, sliced radishes and lime wedges.
