1 lb potatoes, diced (peeled or not)
1 lb leeks, or sweet onions, diced
4 T butter
s/p to taste
6 T heavy cream
4 T minced chives and parsley

Directions:
Directions:
Simmer potatoes and leeks (or onions) in just enough salted water to cover potatoes for 45 mins until soft.

Puree the vegetables with a blender or hand mixer.

Add butter in bits while pureeing.

Salt/pepper to taste.

Stir in cream.

Sprinkle with chives and parsley.
