6 tbsps divided olive oil 2 onions thin sliced 4-5 green bell peppers cut into strips 2 red bell peppers cut into strips 3-4 cloves garlic minced 2 oz dry sherry fresh or dried thyme rosemary oregano rosemary and basil to taste 1 -2 tbsp each? 1 28oz can whole peeled tomatoes( use good ones if possible) 1 28 oz can tomato sauce 6 sweet ItalianFeat 2 tbsp oil cook onions and peppers 5 min sausage cut into 1-inch pieces 1 pound boneless chicken cut into 1 inch pieces 1/4 cup flour pinch of sage.

heat 2 tbsp oil and cook onions and peppers 5 min. add garlic cook a couple more min. deglaze the pan with sherry for 2 min add the seasonings as you go. Add tomatoes lower heat and simmer 15 min. In a skillet cook sausages in water until a white foam on the top forms. Drain pat dry heat oil in the same skillet cook sausages through Add to tomato mixture. Dredge chicken in flour heat 2 tbsp oil fry all sides. Deglaze with wine you may have around or sherry scrape into the sauce. Simmer adjust seasonings to taste. When ready serve with crusty bread.

Make a nice pot to enjoy. Simmers on the stove while you catch up on the day Add red wine to the mixture to loosen up the sauce. Nice casual meal.
