1 cup rice
1 - 1 3/4 cup liquid

Rinse the rice to remove some of the starch - this will leave a lighter, fluffier and less sticky grain. If using Arborio or short-grained rice, skip this step because you want risotto creamy.

Using a small pot with a tight fitting lid, use about 1 cup water. For a larger pot, use 1 3/4 cup.

Cook rice 15-20 minutes, depending on the type. Slip a clean towel or paper towel between the lid and the pot. The towel helps absorb condensation that may drip on perfecting cooked grains and make them gummy

Let rice rest 10 - 15 minutes and the grains will plump

Remove the lid and towl and fluff with a fork before serving
