Ingredients: 8 medium potatoes, peeled and cut into chunks 2 tsp. salt 1 cup ham, cut into small pieces ¾ cup of cheese (cheddar, Swiss - whatever you have!) 1 green onion 1 tsp. pepper 1 tbsp. milk 1 cup flour 4 eggs, beaten 2 cups breadcrumbs oil, for frying

Directions:Heat water in a pot to simmer, then add potatoes, 1 tsp. of salt and stir. Simmer for 10-15 minutes, until a fork can easily pierce the potatoes. Dry the potatoes on a towel, then mash until no large chunks remain.
Add the ham, cheese, onions, the other teaspoon of salt, pepper and milk. Mix until incorporated. Shape into 2-inch discs.
Separate the flour, eggs and breadcrumbs into separate dishes. Dredge the croquettes into the flour, shaking off the excess, then dip into the eggs and coat in the breadcrumbs.
Heat oil in a pot to 350ºF. Fry 2-3 croquettes at a time until golden brown, then drain on a rack or paper towels. Let cool and serve. |

Notes: I was visiting Amy when we realized we had an abundance of potatoes. I had bought a bag, Amy had bought a bag and Amy's mother-in-law Joan had bought a bag. We used some of them for this quick lunch and threw it together with what we had in the fridge. All the adults were impressed, and two of the three children asked for seconds (and then thirds)! Will definitely try with other fillings.
