12 tbsp. unsalted butter at room temperature 1½ cups quick cooking oats
1½ cups packed brown sugar 1½ tsp. pure vanilla extract
1½ cups all-purpose flour 1½ tsp. ground cinnamon
¼ tsp. ground nutmeg

Filling:
⅓ cup granulated sugar ¼ tsp. ground nutmeg
1 tbsp. all-purpose flour 4 Granny Smith apples, peeled, cored,
2 tbsp. fresh lemon juice and sliced ¼ inch thick
1½ tsp. pure vanilla extract 4 Honey Crisp apples, peeled, cored,
2 tsp. ground cinnamon and sliced ¼ inch thick

Preheat oven to 350ºF.
To prepare the topping: put the butter and brown sugar into the bowl of an electric mixer. Cream until light and fluffy, about 5 minutes. Add the flour, oats, vanilla, cinnamon, and nutmeg and mix until the dough becomes crumbly. Do not over mix. Set aside.

To prepare the filling: combine the sugar, flour, lemon juice, vanilla, cinnamon, and nutmeg in a bowl. Add the apple slices and toss to coat.
Place the apple mixture in a 9 x 13 inch baking dish. Sprinkle the topping evenly over the apples. Bake for 35 - 45 minutes, until the topping is golden brown and the apples are tender when pierced with a fork. Set on a wire rack to cool a bit before serving.
