2 lrg eggs
1 egg white
5 Tablespoons mayonnaise
1/2 Tablespoon dried parsley
1/2 teaspoon salt
1/8 teaspoon Cayenne pepper
1 teaspoon Old Bay seasoning
1/2 cup finely chopped onion and/or red or green bell pepper
16 ozs lump crabmeat
1/2 sleeve Ritz crackers, crushed

Directions:

Gently mix together all the ingredients. Form patties using 1/2 cup of the mixture for each patty. Place patties on pan suitable for broiling. Slightly flatten the top of each patty. Refrigerate for several hours.

After chilling, top each patty with a small amount of Panko breadcrumbs and a sliver of butter and sprinkle with paprika.

Broil approximately 5-6 minutes until brown and cooked through. Let rest for several minutes before serving. May be served with Cocktail, Tartar or Remoulade sauce.
