4 slices of bacon
3 lbs. lean boneless beef, cut in 1 inch cubes (as tender as your purse allows)
1 c. beef bouillion broth
1 Tb. tomato paste
½ tsp. leaf thyme
1 tsp. salt
freshley ground black pepper
1 bay leaf
2 cloves garlic, minced
2-3 c. good dry red wine
12 sm. boiling onions
½ lbs. fresh mushrooms
butter

Simmer bacon in water for 10 minutes; drain and pat dry well (this eliminates the smokey flavor). Cut in 1/2 inch pieces. Place in heavy skillet and fry until crisp. Transfer bits to a heavy flameproof casserole. To fat left in skillet, add a little oil if needed; heat then brown beef on all sides. Do this in a single layer if possible, brown thoroughly. Transfer meat to casserole, deglaze skillet with a little wine, just swish around to remove bits on bottom of pan and pour into the casserole.
Now add beef bouillon, tomato paste, thyme, salt. pepper, bay leaf and garlic. Pour in enough wine to almost cover meat. Place casserole over direct heat, bring up to a simmer, cover and bake at 300 degrees for 3-4 hours or until meat is tender, basting occasionally. If liquid cooks down, add more wine, bouillon, or water.

While meat cooks, prepare vegetables. Peel onions, and cut a small cross in the stem to prevent their coming apart in cooking; simmer in a little beef broth until tender, about 20 minutes, Reserve cooking liquid from onions.You may also add 3-4 carrots to onions if desired. Saute fresh mushrooms in a Tb. or so of butter for 3-4 minutes.

When meat is done, drain off gravy into a saucepan. To this gravy, add liquid from cooking onions and any leftover mushroom liquid. If fat appears on surface, skim it off; then boil the gravy down for about 5 minutes. Thicken with a paste made by creaming 1 Tb. butter and 1 Tb. flour; gradually blend a little of hot liquid from the pan into the paste, then pour that back into the gravy. Check Seasonings. Combine meat, onions and mushrooms; pour gravy over all, heat thoroughly about 5 minutes. Sprinkle minced parsley over top.

This is an old recipe, so using updated cooking methods might be the best way to do it, or putting it in a crockpot. Good.
