4 cups crushed peaches
1 package pectin
2 tbsp fresh lemon juice
5 cups sugar ( I use pure cane)
½ tsp. cinnamon (Saigon Organic Cinnamon)
Directions:
Directions:
Wash peal and crush fully ripe peaches
Place peaches, lemon juice, and pectin in large pot and stir well
Place on high heat, stirring constantly, bring to full rolling boil over entire surface
Add sugar and spices all at once, heat to full bubbling boil
Boil hard 1 minute stirring constantly
Remove from heat, skim foam off top
Fill jars, process in water bath 5 minutes
