2 packages (8 oz. each) Cream Cheese (at room temperature)
1 cup Sharp Cheddar Cheese, shredded
1 medium ripe Avocado, mashed
½ Lime, Juice extracted
1 small onion, finely minced
½ cup pecans, finely chopped, optional
1 teaspoon garlic powder
1 can (4 oz.) chopped green chilies, drained
Salt to taste

Directions:
Blend cheeses together. In a separate dish, mix the lime juice into the mashed avocado. Add the avocado mixture and all the other ingredients to the blended cheese mixture. Mix well. Divide mixture into 2 or 3 portions. Form each portion into a roll or a cheese ball. Coat with red chili powder, dried parsley, paprika or finely chopped nuts. Wrap tightly in cellophane or wax paper. Refrigerate overnight Serve on crackers. May also be made into one large cheese ball.

Variation:
Tortilla Roll Up Appetizer

Prepare as above, omitting the pecans. Instead of forming the mixture into rolls or cheese balls, spread a ¼" layer onto a large flour tortilla. Roll up tightly. Scrape any excess off with a knife. Wrap tightly in cellophane wrap (Saran). Repeat until all the cheese mixture is used up. Refrigerate overnight. To prepare to serve, unwrap. Slice into "pinwheels". Sprinkle with Paprika.
