1/2 lb. pork sausage
3 to 4 white potatoes
1 1/2 cup fresh kale
4 cups chicken or vegetable broth
1/2 cup heavy whipping cream
1 tsp. thyme
1 tsp. sage
1 small diced yellow onion
Dash of Salt
Dash of Pepper
Parmesan Cheese (optional)

In a large stock pot, brown the pork sausage; remove the excess grease. Add the chicken or vegetable broth, thyme, sage, yellow onion and sliced potatoes. You can leave or remove the skin from the potatoes. If you decide to leave the skin on, be sure to thoroughly scrub the potato with a vegetable brush. Clean kale and set aside 1/2 cup. Place the remaining kale in the stock pot.

Simmer on the stove on medium heat for 30 minutes. Add kale and whipping cream. Simmer under low heat. Save 1/2 cup of kale to add to bowls about 5 minutes before serving. (This will give you a nice green compliment upon presentation.)
