½ c.softened butter or margarine
1 c. sugar
2 eggs
1 t. vanilla
2 c. flour
1 t. baking soda
1 t. baking powder
1¾ c. (500 mg.tub) sour cream or Greek yogurt
Sherry adds a chopped apple and omits the b.soda and pours in a round cake pan.
Topping:
¼ brown sugar
1½ t.cinnamon
½ c.chopped pecans

Directions:

Preheat oven 350ºF
Grease and flour tube or bundt pan or spray with Pam
Sift dry ingredients.
Combine butter and sugar. Add eggs and vanilla. Beat well.
Stir in dry ingredients. Fold in sour cream.
Pour ½ batter in pan; top with ½ topping
Pour remaining batter in pan and top with the remaining topping.
Bake 45-50 minutes.

This recipe is from my Simcoe friend, Sherry Dresser who makes beautiful pottery. She changed up the recipe as mentioned above and makes a glaze to drizzle on top of cooled cake.
Glaze: icing sugar, melted butter, maple syrup, dash of salt.
