3 garlic cloves
2 tablespoons fresh ginger (chopped)
4 lemongrass stalks (tough tops discarded, tender bulbs peeled and chopped) 2 tablespoons chopped fresh cilantro
2 tablespoons water
1/4 cup asian fish sauce
1 tablespoon light brown sugar (firmly packed)
1/2 teaspoon red pepper flakes
4 loin pork chops (boneless, each about 1/2 lb. and 1 inch thick) canola oil (for brushing)

Directions:

• Combine garlic, ginger, lemongrass, cilantro, water, fish sauce, brown sugar and red
pepper flakes in a food processor and combine until blended.

Marinate the pork loin in ziplock overnight for best results

• Heat an oven-safe heavy skillet over high heat. Preheat an oven to 400 degrees.

• Sear the pork chops for 2 minutes on each side.

Transfer skillet immediately to the oven and cook until the internal temperature of the
chop reaches 145 degrees, about 15 minutes.

• Let rest 5 to 10 minutes before serving.
