Ingredients: For those of you looking to get into Keto or follow a low carb diet this dish is very tasty and filling. It stores well in the fridge and can be easily reheated either in the microwave or pan refried. Hope you like.
Ingredients:
- Meat of your choice: Beef, pork, chicken or shrimp - as much as you like! - 1 can of Spam™ - 3 large eggs - 2 (10oz) bags of frozen cauliflower rice - Sesame oil - Snow peas (plus any other non-starchy, Keto/low carb friendly veggies you may like) - Finely diced garlic - Green onion - Soy sauce - Oyster sauce - Finely shredded cabbage

Directions:- Precook whatever meat you'd like to use: Pork, beef, chicken or shrimp, and cut into small pieces and set aside. - Take a can of Spam™ and dice it into small cubes then fry and set aside. - Scramble 3 large eggs, chop into small pieces and set aside.
- In a large skillet (medium heat) add 2 tbsp. of sesame oil and 2 bags of frozen cauliflower rice and stir until the cauliflower rice is broken up and warm. - Once the cauliflower rice is warm, stir in some snow peas, chopped green onion, 1 tbsp. of finely diced garlic and any other low carb veggies you'd like. - Stir in soy sauce to your liking. - Add 2 tsp of oyster sauce. - Add 2 more tbsp. of sesame oil. - Add finely shredded cabbage. - Finally stir in your meat, Spam™ and egg.
Let simmer (low heat) for a few minutes to evaporate some of the moisture. Serve nice and hot! |

Notes: In July 2019, as part of a weight loss contest, I embarked on a Keto/low carb lifestyle. It took a little getting used to but there are now so many Keto groups on social media and keto foods at the supermarket or Amazon that finding a good variety to eat was a lot easier than I thought. There are plenty of recipes out there but this Cauliflower Fried Rice is one those that are easy to make and holds up so well for a few days that I've made it one of my go-to dishes. And in case you're wondering how I've done on Keto, well, from July 2019 to March 2020, I lost 68 lbs! Thankfully I've been able to maintain it even throughout this pandemic.
