1 pkg choc pudding (or vanilla if desired)
2 c milk

PASTRY:
½ c butter
1 c water
⅛ tsp salt
1 c flour
4 eggs

FROSTING:
2 tbsp butter
2 oz semisweet chocolate (2 squares)
1 c confectioners sugar
2 tbsp milk
1 tsp vanilla

Directions:
Prepare pudding and chill for at least 1 hour.
In saucepan over medium heat butter, water and salt until butter is melted and mixture boils.
Remove from heat and stir in flour all at once, vigorously, until it forms a ball. Transfer to bowl to cool for 5 minutes. Then stir in eggs, 1 at a time, beating well after each addition.
Preheat over to 400º Grease a baking sheet. Drop dough into 12 mounds about 5 inches apart. Spread the mound into a 4 x ½ inch rectangle, piling dough on top and slightly rounding the sides. Bake 35 minutes.
Remove from oven; make a 1 inch long slit on side each éclair. Reduce oven temperature to 375º and bake for another 10 minutes. Remove immediately to wire rack to cool
Heat butter and chocolate over low heat until melted. Remove from heat and stir in sugar, milk and vanilla until smooth.
Slice eclairs in half. Spoon about 1 tbsp filling onto bottom half and replace top. Spread top with frosting.
