4 eggs separated
1 14-ounce can sweetened condensed milk
½ c. key lime juice
½ tsp. cream of tartar
1 graham cracker crust

Directions:
Directions:
Preheat oven to 325º
With an electric mixer beat eggs on high speed until thick and light in color.
Turn off mixer and add sweetened condensed milk. Mix on slow speed.
While on low speed add half the lime juice, cream of tartar, then remaining lime juice.
Mix until blended.
Pour into prepared crust and bake until set, about 10-15 minutes, or until center is
firm and dry to touch. Freeze for at least three hours before topping with meringue.

Meringue
Heat egg whites in double boiler with 4T. sugar, stirring frequently to 110º F.
Beat on high speed until they form peaks. Top the frozen pie and return to freezer
until serving. Will keep for several days.
