Ingredients: 4 cloves garlic, minced 1/2 cup (1 stick) butter, softened 1/2 teaspoon salt 2 tablespoons freshly chopped parsley 1 baguette or French bread, cut lengthwise 1/4 cup grated Parmesan

Directions:Make garlic compound butter: In a small bowl, mix softened butter with garlic, salt and parsley until well combined. Roll up into a log and wrap in wax paper. Chill. Preheat oven to 425° and line a large baking sheet with foil. Spread cut sides of bread liberally with garlic butter. Sprinkle with Parmesan. Bake until bread is toasty and golden at the edges, about 10 minutes. |

Notes: I'm familiar with the method of scraping garlic cloves over the top of a split baguette to make garlic bread. You've seen it on TV. The sliced baguette is oiled and grilled. Then raw garlic cloves are scraped over the charred top while chefs with funny accents drink red wine, discuss cooking nuances and ponder how to get us to donate more money to the PBS channel that airs their show in exchange for a tote bag. I've also just sprinkled garlic powder over toasted buttered bread. But for my money, compound butter is the tastiest way of making garlic bread. Gigi agrees. Besides, she doesn't need another tote bag.
Make a log of compound butter and store it in the fridge. You'll be surprised at the number of uses it has.
