1/3 cup plus 1 Tbsp olive oil
4 large garlic cloves, thinly sliced
2 tsp cumin
2 15 oz. cans garbanzo beans, drained and rinsed
3 Tbsp tahini (sesame paste...keep leftovers to make yummy salad dressing)
3 Tbsp fresh lemon juice
Zest of one lemon
1 Tbsp soy sauce or tamari
Salt to taste

In a small sauce pan, combine 1/3 cup oil with garlic slices and cumin. Cook over medium low heat until garlic gets soft but not brown...about 3-5 minutes. Take the sauce pan off the heat.

Put beans, tahini, lemon juice, soy sauce and 1/2 tsp salt in food processor. Use fork to fish out the garlic pieces from oil. Turn on processor and run for 20 seconds. Slowly add the garlic/cumin oil and scrape down the sides of the bowl. Add 1/4 cool water until hummus is creamy and smooth. Season with more salt and add the lemon juice and zest of one lemon.

Let sit out for an hour before serving, so the flavors can develop. Serve with pita chips, veggies, or crackers.
