3 Tbsp chopped cilantro
2 tsp course black pepper
8 garlic cloves, minced
1 pound boneless, skinless chicken thighs cut up into one inch cubes
1/3 cup tomato sauce
1 Tbsp packed brown sugar
1 Tbsp vinegar (white or apple cider)
1/2 cup raisins

Mix cilantro, pepper, and 6 cloves garlic with chicken thigh pieces. Seems like a lot of pepper...but that's how it is supposed to be. Place on baking sheet, bake at 500 degrees for 18-20 minutes. Meanwhile, in food processor blend tomato sauce, remaining 2 cloves garlic, sugar, vinegar and raisins, until raisins are chopped up and incorporated.

Serve chicken with toothpicks and sauce in a bowl near by. This recipe is really good and it is very easy to make a double batch.

Jake loved the people, the culture and the big city living of Spain so much that he moved there after graduating from Cal Poly San Luis Obispo in 2016. Jake moved back to the States in July, 2019 after 3 years of Spanish life...fluent in Spanish language and ready for his next adventure.
