2 Tbsp olive oil
1 Onion chopped
1 Red bell pepper, chopped
2 Carrot, peeled and chopped
2 Cloves garlic roasted and chopped
1 Jalapeno chopped
1Tbsp tomato paste
1 Can of pinto beans, drained and rinsed
1 Can of kidney beans, drained and rinsed
1 Can of black beans, drained and rinsed
1 Tbsp Cumin
2 Cups Chicken Broth
2 Tbsp Chilli powder
2 Tbsp Oregano
½ Cup Cheddar Cheese
½ Cup Sour cream
add salt & Pepper to taste

Directions:

Heat olive oil in a large to medium pot. Add onion, bell pepper, and carrots, and saute until soft. Add garlic and jalapeno and cook for 2-3 minutes. Add tomato paste and tomato sauce and stir, Add tomatoes, beans, broth, and seasoning.
Bring to a boil then reduce heat and let simmer, for 30-40 minutes.
Top each serving with shredded cheese and sour cream.
