Ingredients: 2 cups Long Grain Basmati Rice (washed and soaked in water for 15 mins) 1 medium sized Onions (sliced into lengths) ¼ Cup Beans (cut into small bite size pieces) ¼ Cup Fresh/Frozen Green Peas ¼ Cup Carrot (cut into cubes) ¼ Cup Cauliflower florets ¼ Cup Fresh Coriander Leaves (chopped) 1 medium sized Potatoes (cut into cubes) ½ tsp - garlic, minced ½ tsp - ginger, minced 2 cloves 2 cardamom 1 piece cinnamon ¼ tsp-pepper 2 Green Chilies (sliced) ½ tsp Turmeric Powder ½ tbsp Red Chili Powder 1 tsp Coriander Powder 1 tsp Garam Masala Powder Salt to taste 2 tbsp Cooking Oil 4 cups of water

Directions:Heat a pan on medium heat on a stove and add cooking oil and sauté Onions for 2 mins Add minced garlic and ginger paste and sauté for 2 mins Add cloves, cardamom and pepper and sauté for 3 mins Add Green Chilies, Turmeric powder, Chili Powder, Corriander powder and Garam Masala powder and sauté for 5 mins Add cut Beans, Carrot, Cauliflower & Potatoes and sauté for 3 mins Take a Microwave safe Dish and Add the Basamati Rice (remove all soaked water) Add all the spices and vegetables from the pan to microwave safe bowl Add salt to taste Add 4 cups of water and mix all the ingredients Cook uncovered on full power for 20 mins in Microwave (this can be adjusted based on your microwave) Stir gently with a fork and mix all the vegetables and basamati rice. Cover the dish and cook for additional 2 mins. Allow to stand for 5 mins. Add chopped coriander and serve hot.
Usually this can be eaten with Raita or plain Yogurt |
