2 cups Long Grain Basmati Rice (washed and soaked in water for 15 mins)
1 medium sized Onions (sliced into lengths)
¼ Cup Beans (cut into small bite size pieces)
¼ Cup Fresh/Frozen Green Peas
¼ Cup Carrot (cut into cubes)
¼ Cup Cauliflower florets
¼ Cup Fresh Coriander Leaves (chopped)
1 medium sized Potatoes (cut into cubes)
½ tsp - garlic, minced
½ tsp - ginger, minced
2 cloves
2 cardamom
1 piece cinnamon
¼ tsp-pepper
2 Green Chilies (sliced)
½ tsp Turmeric Powder
½ tbsp Red Chili Powder
1 tsp Coriander Powder
1 tsp Garam Masala Powder
Salt to taste
2 tbsp Cooking Oil
4 cups of water

Directions:
Directions:
Heat a pan on medium heat on a stove and add cooking oil and sauté Onions for 2 mins
Add minced garlic and ginger paste and sauté for 2 mins
Add cloves, cardamom and pepper and sauté for 3 mins
Add Green Chilies, Turmeric powder, Chili Powder, Corriander powder and Garam Masala powder and sauté for 5 mins
Add cut Beans, Carrot, Cauliflower & Potatoes and sauté for 3 mins
Take a Microwave safe Dish and
Add the Basamati Rice (remove all soaked water)
Add all the spices and vegetables from the pan to microwave safe bowl
Add salt to taste
Add 4 cups of water and mix all the ingredients
Cook uncovered on full power for 20 mins in Microwave (this can be adjusted based on your microwave)
Stir gently with a fork and mix all the vegetables and basamati rice.
Cover the dish and cook for additional 2 mins.
Allow to stand for 5 mins.
Add chopped coriander and serve hot.

Usually this can be eaten with Raita or plain Yogurt

Traditionally Vegetable pulao (pilaf) are cooked on stove or pressure cooker and is a laborious process. This recipe uses microwave to do the final cooking and still maintain all the rich flavors.

This is the go to dish in our house that can be prepared in a short notice.
